Natamycin, also named Pimaricin, is a polyene macrolide antifungal inhibitor fermented by Streptomyces natalensis, Streptomyces chatanoogen and other Streptomyces strains. It is an internationally-approved high-efficiency, broad-spectrum and safe biological food preservative to inhibit molds and yeasts in food.
This product is highly safe and reliable for human bodies without altering food flavor. It has been approved for application in more than 40 countries and widely adopted in cheese, meat products, pastries, fruit juices, jams, jellies and pickled products.
In China, natamycin was approved as a food preservative in 1996. It can be applied on cheese, meat products, Cantonese-style mooncakes, pastry surfaces, raw fruit-juice pulp surfaces and surfaces of processing utensils for mold-prone foods, with a residual amount no more than 10 mg/kg.
