ε-Poly-L-lysine Hydrochloride (ε-Poly-L-lysine·HCl, abbreviated as ε-PL·HCl) is a metabolite from Streptomyces albulus. It is polymerized from 25-30 lysine residues. It shows remarkable inhibitory effects against Gram-positive bacteria, Gram-negative bacteria, yeasts and molds. It performs outstanding anti-bacterial activity against Gram-negative Escherichia coli and Salmonella spp., which are hard to be suppressed by other natural preservatives. It also inhibits heat-resistant bacilli and certain viruses. Therefore, it serves as a safe and widely-applicable biological food preservative.
