Nisin is a natural polypeptide preservative produced by Lactococcus lactis. It degrades into amino acids in human bodies without antibiotic-resistance risks. It efficiently eliminates vegetative cells and spores of Gram-positive bacteria. Under special conditions together with EDTA, it can also inhibit Gram-negative bacteria such as E. coli and Salmonella.
