Sodium Propionate is the sodium salt of propionic acid and is a globally recognized safe food additive. It exhibits broad antimicrobial activity against molds, yeasts, and bacteria. Compared to Calcium Propionate, Sodium Propionate has higher water solubility and does not affect the calcium balance of the product.
